Snickers is 2 years old so she is an adult, not a puppy anymore. Young being relative.
How long have you had her and is she mostly with your girlfriend?
My Duchess was seven when I got her and she bonded with me right away. She shows anxiety around my brother, who lives with me. We think that anxiety goes back to her previous home where there was a lot of friction in the house involving the husband.
In the two years we have had Duchess she has developed to actually playing with toys. At first she didn't seem to know what to do with them.
Spending more time one on one with Snickers should be good for your relationship. Also have you done any training with her? Maybe obedience training or other thing like agility would give her more confidence.
I love the picture you discribe of her coloring. It is a cute and appropriate name too.
