Birthday Cake

Taylor the Pem turns three on Saturday,January 28 and for the first time in my life, I've baked a Corgi birthday cake. It looks so good that I'm going to have a piece and I'm sure most of the rest of my family will be in on it as well. It's so healthy with no extra additives such as salt and sugar and yet it is not unsweet. Taylor will love it- but he'll have to blow the candles out first.
I thought I'd share the recipe with GoCorgi members. It's easy to prepare and the end product looks and smells pretty good. It's really a carrot cake - so it's got to be good for everyone.

1 cup of flour
1 teaspoon baking soda
quarter cup peanut butter
quarter cup vegetable oil
one cup finely shredded carrots
1 teaspoon vanilla essence
one third cup honey
one egg.

Into a medium size bowl, seive flour with baking soda and mix.

Into another small bowl, mix well the remaining ingredients, having melted the honey into liquid form.

Mix carrot mixture into flour until all the flour is fully wet and integrated.

Pour mixture into a greased cake pan (six to eight inches round) and bake at 350 degrees (180 degrees celsius) for 30 minutes. Let cool before storing.

Mike thank you for this recipe. I will be ready for Duchess's birthday and I am going to give it a try even before that. Why wait till July?

Taylor simply loves the Corgi Cake - it is certainly firmly entrenched as one of his favourite food. He even got to get a couple of portions while tracking for his dinner. He sat at the table and blew out the candles with a little help and boy, did he gulp down his first piece of the cake - it never touched the sides of his mouth.
The family went for a picnic on the beach plus swimming and brought takeways and had our dinner in a grassy park alongside the beach. Lots of people there got to know about Taylor's third birthday so he was , alongside the weather, the talk of the town.

A few pointers with the cake - I used crunchy peanut butter which makes the cake more interesting and intensively nutty and I use canola oil which is much more healthy than vegetable oil. For us humans , the cake is a little on the dry side and could do with the addition of whipped cream or icing.

I trust Hurk also had a happy birthday.

My wife's birthday and Ruby my Cardigan birthday's are 3 days apart and I usually make a dual party. the cake recipe sounds good

A picinic sounds very nice.. but I have 3 feet of snow out my back door .. so we opted for the indoor version of you picnic...lol

January seems to be a popular month for birthdays... lots of canines and humans...

I passed your cake recipie to a girlfriend so I see it blossiming in to the us very soon...!!!

Monty and Dylan each have birthdays coming up very soon, and your Corgi Cake sound like something they would really enjoy!

Maybe topped with some cream cheese icing too.

Yes, there are a couple of icing options that are good for dogs and cream cheese would be one of them - but no icing sugar, or sugar (or salt) mind you.
I'll be making another of these cakes shortly and take it to agility training. We always have coffee and cakes/biscuits after agility training on Mondays and Wednesday evenings at the training centre. But up til now, no one has brought anything for their dogs. So I may as well be the first.
